Rice sticks (Vermicilli) w/ nuts
1 cup vermicelli
2 tablespoons olive oil
1 1/4 cups hot water
½ teaspoon cumin seeds
½ teaspoon uradh dhal
½ teaspoon mustard seeds
1 serrano pepper cut in half
Half onion finely chopped
1 teaspoon ginger
1 finely chopped tomato
5 to 6 curry leaves
1 cup roasted peanuts
Lime
Coriander leaves
Use a non stick pan. Add some oil, and when it gets hot add the seasoning: cumin seeds, mustard and uradh dhal
When it splutters add the onions, chili and curry leaves. Saute for 3-4 minutes.
Add the vermicelli and roast for 2 to 3 minutes, till it is coated in oil. Add some salt to taste.
Add 1 1/4 cups boiling water to the vermicelli, mix and cook for for 4 to 5 minutes till vermicelli is cooked well.
Cover and let it stay for 5 minutes.
Add roasted peanuts, coriander leaves and grated coconut to garnish.
