Rice sticks (Vermicilli) w/ nuts

1 cup vermicelli

  • 2 tablespoons olive oil

  • 1 1/4 cups hot water

  • ½ teaspoon cumin seeds

  • ½ teaspoon uradh dhal

  • ½ teaspoon mustard seeds

  • 1 serrano pepper cut in half

  • Half onion finely chopped

  • 1 teaspoon ginger

  • 1 finely chopped tomato

  • 5 to 6 curry leaves

  • 1 cup roasted peanuts

  • Lime

  • Coriander leaves

  1. Use a non stick pan. Add some oil, and when it gets hot add the seasoning: cumin seeds, mustard and uradh dhal

  2. When it splutters add the onions, chili and curry leaves. Saute for 3-4 minutes.

  3. Add the vermicelli and roast for 2 to 3 minutes, till it is coated in oil. Add some salt to taste.

  4. Add 1 1/4 cups boiling water to the vermicelli, mix and cook for for 4 to 5 minutes till vermicelli is cooked well.

  5. Cover and let it stay for 5 minutes.

  6. Add roasted peanuts, coriander leaves and grated coconut to garnish.
