Protein Power Bowl
Ingredients:
1 cup quinoa
1 cup spinach
1/2 cup mushrooms
1/2 cup chopped white onion
1 tsp sesame oil
1 tbsp soy sauce
1 tbsp rice vinegar
1/2 tsp sriracha
Saute onions on skillet with sesame oil. Add spinach and mushrooms and continue to saute while adding soy sauce, rice vinegar, and sriracha for 5-7 minutes.
Boil 1 cup of quinoa with 2 cups of water. When it starts to simmer place on low for another 5 minutes.
Add sesame sticks for a nice crunch!
