Chickpea Party!
3 cups cooked chickpeas ( strain and boil)
6 oz. organic Broccoli Slaw
4 oz. shredded carrots
2 tbsp of lemon juice
4 garlic cloves
2 slices of ginger
½ serrano pepper optional
1 cup chopped parsley
1 onion chopped
1 tbsp. Olive oil
Salt pepper to taste
Grated coconut for garnish (optional)
In a large pan heat 1 tbsp. olive oil. Add broccoli slaw and shredded carrots and saute for 2 to 3 minutes till crisp.
Add cooked chickpeas and saute for another 3-5 minutes. Transfer to a large bowl and add salt and pepper to taste.
Add finely chopped parsley, garlic, ginger, lemon juice, serrano pepper and onion in a food processor or veggie chopper and pulse for 30 seconds.
Now mix ingredients in large bowl and garnish with grated coconut.
