Tomato Rice
Tomato Rice
- 1 ½ cups cooked basmati rice
- 4 roma tomatoes finely chopped (microwave for 1 minute until soft)
- 1 onion finely chopped
- 1 bay leaf
- 3 cloves
- 3 cardamom
- 1 stick cinnamon
- 1 tsp. Turmeric powder
- 2 tsps. coriander powder
- ½ tsp. chilli powder
- ½ cup chopped fresh mint
- 1 tbsp. ginger, garlic paste
- 1 teaspoon garam masala powder
- 1 tbsp. cilantro finely chopped
- 2 tbsp. olive oil
- Cook rice (1.5 cups of rice to 3 cups of water) in a separate bowl
- In a large pan add 2 tbsp. olive oil. Add in the following spices: cloves, cardamom, bay leaf, cinnamon.
- After 1-2 minutes add the chopped onions and saute until it turns golden brown, then add the ginger garlic paste and cook for 3-4 minutes.
- Now add the cooked tomatoes with the turmeric powder, chili powder and coriander powder and saute for about 10 minutes until everything is well combined and cooked.
- Now add the mint and cook for another 5 minutes.
- Mix the rice well in the tomato mixture.
- Finally add some cilantro and serve.
