Chickpea Party!
- 3 cups cooked chickpeas ( strain and boil)
- 6 oz. organic Broccoli Slaw
- 4 oz. shredded carrots
- 2 tbsp of lemon juice
- 4 garlic cloves
- 2 slices of ginger
- ½ serrano pepper optional
- 1 cup chopped parsley
- 1 onion chopped
- 1 tbsp. Olive oil
- Salt pepper to taste
- Grated coconut for garnish (optional)
- In a large pan heat 1 tbsp. olive oil. Add broccoli slaw and shredded carrots and saute for 2 to 3 minutes till crisp.
- Add cooked chickpeas and saute for another 3-5 minutes. Transfer to a large bowl and add salt and pepper to taste.
- Add finely chopped parsley, garlic, ginger, lemon juice, serrano pepper and onion in a food processor or veggie chopper and pulse for 30 seconds.
- Now mix ingredients in large bowl and garnish with grated coconut.
