Protein Power Bowl
Ingredients:
- 1 cup quinoa
- 1 cup spinach
- 1/2 cup mushrooms
- 1/2 cup chopped white onion
- 1 tsp sesame oil
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 tsp sriracha
- Saute onions on skillet with sesame oil. Add spinach and mushrooms and continue to saute while adding soy sauce, rice vinegar, and sriracha for 5-7 minutes.
- Boil 1 cup of quinoa with 2 cups of water. When it starts to simmer place on low for another 5 minutes.
- Add sesame sticks for a nice crunch!
